Pickled Green Beans in Glass Pickling Jars


  •   Ingredients
  • 1 pound green beans, trimmed
  • 2 cups white vinegar
  • 2 cups water
  • 2 tablespoons salt
  • 2 tablespoons sugar
  • 2 cloves garlic, minced
  • 1 teaspoon dill seeds
  • 1 teaspoon black peppercorns
  • 1/2 teaspoon red pepper flakes (optional, for spiciness)
  • Glass Canning Jars
  1. Initial Preparation
    Wash the green beans thoroughly and trim off ends. In a pan, combine vinegar, water, salt, sugar, garlic, dill seeds, black peppercorns, and red pepper flakes. Bring to a boil over medium heat, stirring until salt and sugar have dissolved.
  2. Making Pickled Beans
    Add the green beans to the boiling liquid and blanch them for 2 minutes to preserve the crispness of the beans. Using a slotted spoon, transfer the beans to clean, sterilized glass canning jars, packing them tightly, leaving a 1/2 inch of headspace at the top.
  3. Final Steps
    Pour the hot pickling liquid over the beans, completely covering. Tap the mason jars gently to remove any air bubbles. Seal the jars with their canning lids and let them cool to room temperature. Once cooled, refrigerate the jars for at least 24 hours to allow the flavors to develop.
